Freeze drying is a process of preserving perishable food. This process creates meals that people can easily carry as well as store. Freeze-dried meals come as either single-food items or entrees and suit a range of tastes and purposes. A primary purpose of these meals is as freeze dried emergency food items because of their long shelf life. Commercial providers of freeze-dried meals use two primary types of packaging, depending on the type of food and the expected shelf life.
Freeze drying, which is also known as lypophilization, first became popular during the World War II era. This process was first used to preserve certain types of medication. Since that time, freeze drying has been applied to hundreds of different food items. The freeze drying process utilizes a pressurized vacuum to remove all water and other liquid from frozen food. Without water, microorganisms that cause spoilage cannot thrive, and food remains unspoiled while retaining its flavor, aroma, and nutritional value.
